While at Delfina Foundation in 2016 as part of The Politics of Food: Markets and Movements, writer Chris Fite-Wassilak produced an essay that reflected on memory and authenticity through his experiences of two cheeses: Gour Noir an artisanal goats' cheese produced by Veronique and Christian Arnaud, old anarcho-syndicalist 68ers; and Provel, pasteurized process cheddar, Swiss and provolone cheese, ideal for sandwiches and pizza-burgers' a speciality of St Louis, Missouri.
